The world's largest enchilada will once again be made in Las Cruces.
The enchilada, measuring 10 1/2 feet in diameter, will be cooked at the Hadley Complex this year.
As Local 4 News previously reported, because of equipment problems last year the giant enchilada could not be prepared. Roberto Estrada said he had been required by the state to replace the burner he used for years, but that came with a hefty price tag.
Thanks to residents and businesses more than $15,000 was raised to get the equipment up to code. That means the enchilada will once again take center stage at the Whole Enchilada Festival which is scheduled for September 27th through the 29th.
